Il est d\u00e9cor\u00e9 d\u2019une \u00e9toile et d\u2019une \u00e9toile verte au guide Michelin depuis 2000 pour son restaurant gastronomique \u00e9ponyme \u00e0 Lyon. Au cours de cette journ\u00e9e, les participants ont \u00e9labor\u00e9 huit plats mettant \u00e0 l\u2019honneur des ingr\u00e9dients tels que les l\u00e9gumes, les fruits, les l\u00e9gumineuses et les c\u00e9r\u00e9ales. L\u2019objectif \u00e9tait de d\u00e9montrer qu\u2019une cuisine savoureuse peut \u00eatre r\u00e9alis\u00e9e en accord avec les principes de durabilit\u00e9 et de sant\u00e9.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Adopter une cuisine saine, durable et \u00e9coresponsable<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cela implique de repenser nos habitudes culinaires pour minimiser notre impact environnemental tout en pr\u00e9servant notre sant\u00e9.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Privil\u00e9gier les <strong>produits locaux et de saison<\/strong> r\u00e9duit l\u2019empreinte carbone li\u00e9e au transport et favorise une agriculture respectueuse de l\u2019environnement. Les aliments de saison sont souvent plus savoureux et nutritifs&nbsp;;<\/li>\n\n\n\n<li>R\u00e9duire le <strong>gaspillage alimentaire<\/strong> en planifiant ses repas, conserver correctement les aliments et utiliser les restes permettent de diminuer le gaspillage. Des techniques comme la cong\u00e9lation, la mise en conserve, le sous-vide ou la fermentation aident \u00e0 prolonger la dur\u00e9e de vie des produits&nbsp;;<\/li>\n\n\n\n<li>Opter pour des <strong>prot\u00e9ines v\u00e9g\u00e9tales<\/strong> en int\u00e9grant davantage de l\u00e9gumineuses, de c\u00e9r\u00e9ales compl\u00e8tes et de noix dans son alimentation r\u00e9duit la d\u00e9pendance aux prot\u00e9ines animales, dont la production est souvent plus polluante&nbsp;;<\/li>\n\n\n\n<li>Utiliser des ustensiles et <strong>\u00e9quipements \u00e9cologiques<\/strong>&nbsp;;<\/li>\n\n\n\n<li>Pratiquer le compostage&nbsp;: <strong>composter les d\u00e9chets organiques<\/strong> diminue la quantit\u00e9 de d\u00e9chets envoy\u00e9s en d\u00e9charge et produit un excellent engrais pour le jardin.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">En adoptant ces pratiques, chacun peut contribuer \u00e0 une alimentation plus
